Huevos con Nopalitos

Simply send your hunger packing! This combination of crisp green cactus pads, or nopalitos, and scrambled eggs is as easy to prepare as it is tasty. In fact, this dish is so quickly prepared – it’s not just for breakfast anymore! And if your stomach is really growling, simply add some black beans on the side.

Ingredients
4 eggs
½ jar of Nopalitos María Dolores
½ onion
1 tbsp oil for frying
Salt and pepper
Method
Nopalitos are naturally slimy – the mucilage plays a role in the absorption of water by the cactus plant – which is why you should place them in a sieve and rinse them under cold running water before transferring them into a large bowl filled with water. Soak for 5 minutes, drain well and cut into quarters.
Dice the onion. Crack and scramble the eggs.
Heat oil in a frying pan. Glaze the onion in the oil, then add the nopalitos and keep frying both for a little while.
Add the eggs and let them set over medium heat, stirring occasionally. Season with salt and pepper to taste.
Serve with black beans, corn tortillas and salsa verde or salsa roja.
