AROMATHERAPY FOR MEAT Adobo is the Spanish word for marinade or seasoning – and the perfect marinade has never been easier. All you have to do is twist off the screw cap because we have already bottled it for you.

While the actual recipe is an old and well-guarded secret, we’ll let you in on the key ingredients: fleshy tomatoes, cumin and guajillo chillis (which are slightly sweet and not too hot) result in an exciting flavour that is uniquely Mexican.

Southern Mexico is particularly crazy about pork en adobo while the people in the north prefer beef. The marinade tastes just as great on chicken or even vegetarian dishes such as tofu – which, strictly speaking, is not traditionally Mexican. But in keeping with our policy for using adobo or any other of our specialities: as long as you love it, anything goes!
