Nopalitos

PRICKLY ON THE OUTSIDE, TASTY THROUGHOUT – For everyone brave and curious enough to broaden their culinary horizon, nopalitos are the tender young shoots of the prickly pear or nopal cactus. A culinary delight since the ancient Maya and Aztec civilizations, they are also suitable for diabetics and said to have a detoxifying effect.

Nopalitos are carefully harvested and de-thorned. Adding onions, garlic and bay leaves to the water used for blanching gives the naturally mild nopalitos their distinct aroma. Once cooked, they are pickled in brine.

Try them in a salad with tomatoes and feta or queso fresco, with scrambled eggs for breakfast, covered in mole or pan-fried as a healthy meat substitute!
