It’s no secret that chocolate makes people happy. As one of the ingredients in mole, you could say that it’s also at the core of Mexican cuisine. But don’t be fooled into thinking that this dish has anything to do with ordinary chocolate desserts to indulge your sweet tooth. Its abundance of nutty, sweetish and slightly spicy flavours is unbeatable, so it comes as no surprise that mole is often referred to as a “monumental delicacy”.

An excellent match for chicken thighs, mole has a starring role whenever it makes its way onto a plate. Chicken breasts are also suitable for this dish.

Ingredients
4 chicken thighs, skinned and boneless
1 litre (35fl oz) chicken broth
1 jar of Mole María Dolores
Method
Bring the chicken broth to a boil. Add chicken thighs, reduce heat and simmer on medium heat for about 25 minutes until they are cooked through, then take them out of the broth.
Pour mole into a pan, add the cooked chicken thighs and let the mole warm up on low heat.
Serve with rice and corn tortillas.
